Pear, rocket and walnut salad

Ingredients:

  • 3 tbsp walnuts
  • 1 just ripe pear
  • 1.5 cups rocket leaves
  • 25g parmesan, shaved
  • 2 1/4 tsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Recipe:

Heat a non-stick frypan over medium heat, add walnuts and cook for a few minutes until they start to turn golden brown. Transfer to a plate and allow to cool. Quarter the pear, core and cut each quarter into two pieces. Combine pears, rocket, parmesan and walnuts in a salad bowl. To make dressing, combine oil, lemon juice, salt and pepper in a bowl- stir vigorously until well combined and pour just enough to coat salad.
