Veggie Nutrition Bowl
Ingredients:
- 50g canned black beans, rinsed and drained
- 80g canned chickpeas, rinsed and drained
- 80g cucumber, chopped
- 100g carrot, chopped
- 1/2 small red chilli, chopped
- 20g feta, chopped
- 1 tbsp fresh coriander, chopped
- 2 tsp. extra virgin olive oil
- 2 tbsp. freshly squeezed lemon juice
Recipe:
Add the cucumber, carrot, chickpeas, black beans, chili, feta and coriander into the same bowl without combining the ingredients. Drizzle olive oil and lemon juice over the top; season with salt and pepper. Serve.
