Taco salad
Ingredients:
- Approx. 2 cups mixed greens (eg. Spinach, cos, butter, etc.)
- 1/4 avocado, diced
- 100g sweet potato (leftovers)
- 5 oz black beans
- 2 tbsp frozen corn, thawed
- 1/4 red capsicum, diced
- 6 Cherry tomatoes, halved
- Optional, for extra flavor:
- 1 tsp taco seasoning, 2 tbsp salsa,1 tsp lime juice
Recipe:
Mix greens in large bowl. Cut 100g of sweet potato (left over from previous night) into small bites, (mix with taco seasoning for extra flavor if desired), reheat and add to salad. Top with black beans, capsicum, tomatoes, avocado (and salsa or lime juice if desired).
