1 cup of vegetable soup*
Ingredients:
- 3 tomatoes
- 3 green capsicums
- 1kg carrots
- 2 cups green beans
- 1 bunch spring onions
- 1 bunch celery
- 2 large cans crushed tomatoes
- 4 cups water
- 2 vegetable stock cubes (or to taste)
- Salt/pepper to taste
Recipe: (will have leftovers!)
Chop vegetables and place into a large pot with the crushed tomatoes and water. Add the vegetable stock cubes and simmer until veggies are tender, about 1 hour. Add salt/pepper to taste. You can substitute other vegetables also, such as broccoli, cauliflower, mushrooms, zucchini (and you can also add a bit of chili. Freezes really well also!
