White fish over salad with corn
Ingredients:
- 1/2 cob corn
- 1/2 tsp butter
- 1/2 clove garlic, crushed
- 1/2 tsp parsley, chopped
- 1/2 tsp oil
- 150g white fish, steamed or grilled
- 1 cup mixed greens (spinach, arugula, etc.)
- 1/4 onion, sliced
Recipe:
Preheat oven to 200C. Mash butter, garlic and parsley. Cut piece of foil large enough to hold 1/2 a cob, place cob on foil, top with butter mix, then seal edges to form parcel. Bake, or cook on the barbecue, for 20-30 mins or until tender. Meanwhile, prepare fish, cut to serving size & check for bones. Preheat pan to med. heat with 1/2 tsp oil. Cook to desired texture. Serve on bed of greens with sliced onions and other desired veggies for salad. Serve corn on cob or cut corn from cob and serve on salad.
