Steak, potato and steamed vegetables

Ingredients:

  • 200g steak
  • 1 cup steamed vegetables (such as asparagus, broccoli, green beans)
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper
  • 1 small potato or 3-4 baby potatoes

Recipe:

Preheat oven to 180 degrees. Scrub potato & dry. Pierce & drizzle with 1/2 tbsp oil. Bake on foil lined tray for approx. 45 min. Meanwhile cut veggies into bite-sized pieces. Add 1-2” water into saucepan and bring to a boil. Then heat a heavy-bottomed skillet (preferably cast iron) over high for 5 minutes. Season steak with salt and pepper. Add 1/2 tsp oil to pan, top with steak and cook about 3-4 minutes or until golden brown curst forms. Turn and cook 2-4 min, depending on how well-done you like your meat. While steak cools, add veggies to boiling water, cover & reduce heat to medium. Check after a few minutes and remove when tender. Sprinkle vegetables with a tiny bit of olive oil, lemon juice, salt and pepper. Serve steak & veg with potato
