Tuna Melt Sandwich
Ingredients:
- 2.5 oz water-packed tuna
- 0.5 tbsp fresh chopped basil
- 0.25 stalk celery, minced
- 0.5 finely chopped scallion – green part only (optional)
- 1 tbsp lemon juice, or more to taste
- Extra virgin olive oil to taste
- Salt and pepper to taste
- 30g bocconcini cheese, sliced
- 1/2 tomato, sliced
- 1 tbsp fresh basil
- 2 slices of wholegrain bread, toasted
Recipe:
Pour tuna into small mixing bowl. Use a fork to break tuna chunks into vey small pieces; add basil, celery, scallions and lemon juice to the bowl. Use fork to stir all ingredients together until wellmixed. Add in oil, salt and pepper. Toast bread, fill with cheese, tomato, basil and tuna filling. Serve and enjoy!
