Grilled fish with steamed veggies and large potato*

Ingredients:

  • 2 large potatoes (white or sweet potatoes)
  • 1 cup steamed vegetables (such as asparagus, broccoli, green beans)
  • 1.5 tsp olive oil
  • 200g fish (your choice on kind!)
  • Salt and pepper

Recipe: (save 1 potato for tomorrow)

veggies, cover & reduce heat to medium. Check after a few minutes and remove when tender. Sprinkle vegetables with salt and pepper to taste. While vegetables cook, prepare fish, cut to serving size & check for bones. Preheat frying pan to med. heat with 1/2 tbs oil. Cook on both sides to desired texture. Serve fish with veggies and one of the potatoes. Save the second potato for tomorrow.
