Beef Stir-fry*

Ingredients:

  • 350 lean beef, cut into strips
  • 1.5 cups Mixed stir fry veggies:
      • 1/2 brown onion, sliced
      • 1/2 red capsicum, sliced
      • 60g baby corn, halved lengthways
      • 1 bunch broccolini, cut lengthways
  • 1 tsp olive oil
  • 1 clove Garlic
  • 3/4 tbsp Soy sauce
  • 1 tbsp Oyster sauce
  • Dash of Chili
  • 2 cups cooked quinoa

Recipe: (save half for tomorrow)

Cook quinoa as per packet instructions. Heat a large wok over high heat. Once hot, add 1/2 tbsp oil and carefully swirl around to coat the side of the wok. Heat until very hot. Add 1/2 beef strips and stir-fry for 2-3 minutes or until the beef is browned
and just cooked. Remove and place on plate then repeat with other 1/2 of the beef strips. Heat remaining oil in the wok over med-high heat. Add the onion, capsicum, corn and broccolini. Stir-fry for 2 minutes. Add about 1 tbsp water, cover and cook for 30-60 seconds or until the vegetables are just tender. Add the soy sauce, garlic, oyster sauce and chili to the wok. Toss well to combine. Add the beef
and toss until heated through. Save half for tomorrow and immediately serve other half with 1 cup quinoa.
