Salad with tuna and rice
- Approx. 2 cups mixed greens (eg. Spinach, arugula, butter, etc.)
- 6 Cherry tomatoes
- 1/4 avocado, diced
- Small tin tuna
- 1/2 cup leftover brown rice
- 1 tbsp lemon juice (optional)
Mix greens and tomato in large bowl. Reheat rice from previous night and add to bowl. Top with tinned tuna, avocado (and lemon juice if desired).
