Quinoa Tabouli Salad with Chickpeas*

Ingredients:

  • 1/4 cup uncooked quinoa
  • 1 cups parsley, finely chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup diced tomato
  • 1/4 cup diced cucumber
  • 1/2 cup drained, canned chick peas
  • 1/4 cup lemon juice
  • 1.5 tbsp olive oil
  • Salt to taste

Recipe:

Cook quinoa according to packet instructions. Meanwhile, combine the parsley, red onion, tomato, cucumber and chickpeas in a large bowl; stir through the quinoa when ready. Combine the lemon juice and olive oil then drizzle over the salad and stir through. Season with salt to taste. Save half for tomorrow and enjoy half now!
