Crispy Salmon with Stir Fry Veggies (serves 2)

Ingredients:Ingredients;

  • 2 Skin on Salmon Fillets (400-500g)
  • 1 Medium Carrot
  • 1 Red Capsicum
  • 4 Large Mushrooms
  • 1 Bunch Broccolini
  • 2 Cloves Garlic
  • Soy Sauce
  • Oyster Sauce
  • Fish Sauce
  • Honey

Recipe:

1: Remove Salmon from pack and dry with paper towel, then salt the skin

2: Bake salmon in oven for 15 mins at 200 deg’

3: Dice garlic, carrot, mushrooms and capsicum

4: Heat a pan on high and add 2 tsp coconut oil

5: Stir fry carrot and capsicum together for 3 min

6: Add garlic and mushrooms and broccolini and fry for 5 min

7: Add 1 tbsp of soy and oyster sauces, a dash of fish sauce and 2 tsp honey.

8:Serve salmon on top of vegetables alongside steamed rice or noodles.
