Zucchini pasta with Bolognese sauce*
Ingredients:
- 3 small / 2 med zucchini, spiralized
- 300g Lean beef mince
- 2 tsp olive oil
- 1 brown onion finely diced
- 4 cloves garlic minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 cup tomato passata
- Salt and pepper
- 1 tsp parmesan cheese
Recipe: (save 1/2 the sauce for leftovers)
Use a spiraliser for zucchini or peel ribbons & slice into long noodles. Heat pot of water until boiling. Heat oil in pan over a med-high heat. Add onions & garlic and sauté for 1-2 min or until onion is translucent. Add mince & brown, breaking up lumps. Add herbs and tomato passata and simmer for 3-4 min or until mince is cooked through. Season with salt/pepper. While sauce is cooking add zucchini noodles to boiling water and cook for 1 min or until just tender. Drain and place in a serving bowl. Top with 1/2 the sauce & Parmesan. Save the rest for tomorrow!
