White fish with pineapple mint salad and brown rice and steamed vegetables*

Ingredients:

  • 2 cup brown rice, cooked
  • 150g white fish
  • Dash of Olive oil
  • 1/2 cup pineapple, chopped
  • 2 tbs red onion, chopped
  • 1/2 red chili, chopped (optional)
  • 1.5 tbs cup fresh mint leaves, chopped
  • 1.5 tbs cup fresh lime juice
  • Fresh green salad leaves
  • 1 cup steamed vegetables (such as asparagus, broccoli, green beans)

Recipe:

Cook rice according to package. Cut veggies into bite-sized pieces. Add 2-3” water into saucepan and bring to a boil, add veggies to boiling water, cover & reduce heat to medium. Check after a few minutes and remove when tender. While veggies steam, heat
a large fry pan with a drizzle of oil. Place the fish fillet on a sheet of paper towel and pat gently to remove excess moisture. Cook for a few minutes on each side until cooked through (flesh should flake easily with a fork). While the fish is cooking, combine the
pineapple, red onion, chili, mint leaves and limejuice. Once the fish is cooked, season with salt and pepper, serve with the pineapple salad and extra green leaves, plus 1/2 steamed brown rice and veggies. Save rest of rice for tomorrow!
