Vegetable and Cashew Stir-fry*
Ingredients:
- 200g snow peas
- 100g carrot, cut into matchsticks
- 200g green beans, ends trimmed
- 100g frozen green peas, thawed
- 45ml (3 tbsp.) tamari sauce
- 1 tsp grated ginger
- 1 garlic clove, crushed
- 10g raw, unsalted cashews
- 10ml (2 tsp.) extra virgin coconut oil
- 1 small red chili, chopped
Recipe:
Heat coconut oil in a non-stick wok over medium heat, add carrots and garlic; cook for a few minutes, Mix in snow peas, green beans, green peas and chili with grated ginger and tamari sauce, cook for 5-7 minutes. With only 3 minutes remaining mix in cashews. Season with salt and pepper. Save half for tomorrow and dish remaining half into a bowl. Enjoy!
