Thai-style Tempeh salad
Ingredients:
- 100g Tempeh
- Asian style salad vegetables, we recommend the following:

- 1 oz salad greens (any kind)
- 1/2 small red onion, finely sliced
- 2 kaffir lime leaves, finely sliced
- 1 long red chili, deseeded and finely sliced
- 1/4 cup coriander leaves
- 1/4 cup mint leaves
- 1/4 cup basil leaves

- 1/2 cup cooked rice noodles
- Thai style dressing (be mindful of sugars!)
Recipe:
Cook rice noodles according to package. Slice tempeh into about 1/4 inch thick pieces and char-grill, barbecue, or panfry to your liking. Set aside for 5 minutes, then slice thinly. Meanwhile, add noodles to salad bowl; place salad greens, vegetables and herbs in bowl and toss lightly. Place the tempeh on the salad and pour over dressing. Serve immediately.
