Spicy Chickpea and Spinach Stew (serves 2)

Ingredients:

  • 1 tsp light olive oil
  • 1 small onion diced
  • 1 Garlic Clove crushed
  • 1cm fresh ginger peeled and grated
  • 1/2 Green Chilli finely chopped
  • 1/2 Tsp Coriander
  • 1/2 Tsp Cumin
  • 1/4 Tsp Turmeric
  • 1 can Chickpeas drained and rinsed
  • salt and freshly ground black pepper
  • 2 cups Baby Spinach
  • 1/2 can diced tomatoes

Recipe: (will have leftovers!)

Heat the oil in a large saucepan and add garlic, onion, ginger, chilli, coriander, cumin and turmeric. Cook over moderate heat for 10 minutes until onions have softened. Add the tomatoes and chickpeas. Bring to a boil then simmer for 10 min. Add the spinach and stir until the spinach has wilted. Remove from heat, season with salt and pepper and fresh cilantro (coriander). Serve with either
couscous or wholegrain rice. (Add greek yogurt if desired) Approx’ 300 cals per serve.
