Spiced Chickpeas and Roasted Cauliflower *

Ingredients:

  • 1 cup (165g) canned chickpeas, rinsed and drained
  • 2 cups (600g) cauliflower, chopped
  • 1 cup (30g) parsley, chopped
  • 1 white onion, sliced
  • 2 garlic cloves, crushed
  • 1 tbsp. extra virgin olive oil
  • 3 tbsp. fresh lime juice
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1/2 tsp. cayenne pepper

Recipe:

Preheat oven to 180C and line a baking tray with baking paper. Place cauliflower and onion on tray and drizzle half of the olive oil over the cauliflower. Sprinkle parsley over the top. Season with salt and 1 garlic clove crushed. Combine all the ingredients together. Place the cauliflower in the oven and cook for 20 minutes or until golden brown. While cauliflower is baking, combine chickpeas with coriander, cayenne pepper, 1 garlic clove and cumin. Add the roasted cauliflower to the chickpeas, drizzle the remaining olive oil and lime juice over the top. Save half for leftovers and enjoy half now!
