Roasted chickpeas with Raw Veggies

Ingredients:

  • 50g canned chickpeas, drained and rinsed
  • Sprinkle of salt
  • Dash of olive oil
  • Sprinkle of curry powder
  • Sprinkle of cayenne pepper
  • Sprinkle of Chili flakes (optional)
  • Chopped vegetables (eg. Carrot, cucumber, celery, capsicum)
  • Handful of olives

Recipe:

Heat a skillet over medium heat. In a bowl add the chickpeas, oil, salt and spices (optional, to taste) and toss to coat. Once skillet is hot, add chickpeas and sauté, stirring frequently. Heat for approximately 5-8 minutes, until chickpeas are browned and fragrant. Let cool slightly and serve with veggie sticks and olives.
