Pork San Choy Bow*
Ingredients:
- 1 tsp olive oil
- 1 tsp sesame oil
- 1/4 red onion, finely chopped
- 1/2 clove garlic, crushed
- 1 tsp grated ginger
- 400 pork mince
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp lime juice
- 1/2 red capsicum, finely chopped
- 1/2 cup bean sprouts
- 1 spring onion, chopped
- 1/4 cup coriander leaves, chopped (optional)
- 1 large lettuce (3 whole leaves), washed and dried
- 2 cups rice, cooked
Recipe: (save 1/2 for tomorrow)
Heat olive oil and sesame oil in wok, add onion, garlic and ginger and cook until the onion becomes transparent. Add the pork mince and cook, stirring, until cooked through. Add soy sauce, oyster sauce, lime juice and capsicum and simmer for 2-3 minutes. Add bean sprouts, spring onions and coriander. Save 1/2 for tomorrow’s lunch, then divide remainder, between 3 lettuce leaves and serve.
