Nicoise Salad with bread

Ingredients:

  • 125g baby new potatoes, quartered
  • 50g green beans, topped and tailed
  • 1/4 medium red (Spanish) onion, sliced thinly
  • 40g mixed lettuce leaves
  • 60g cherry tomatoes
  • 100g canned tuna in oil, drained, flaked
  • 1 hard-boiled egg, peeled and cut into quarters
  • 20g seeded black olives
  • 1 anchovy fillet in oil, drained and cut in half lengthways
  • 15ml of lemon juice
  • 1/2 crushed clove of garlic
  • 1/4tsp of Dijon mustard
  • 15ml olive oil, if desired
  • 1 piece of wholegrain bread / bread roll

Recipe:

Steam potatoes and beans until just tender, drain and allow to cool. Combine onion, lettuce leaves and cherry tomatoes in a large bowl. Top with potatoes, beans, flaked tuna, eggs, olives and anchovies. To make dressing, mix lemon juice, garlic, mustard (and oil if desired). Serve with bread roll and salad with dressing on the side.
