Miso Chicken Broth with Soba Noodles (serves 2)

Ingredients:

  • Chicken Breast (400g)
  • 4-6 mushrooms
  • 2 Cloves of Garlic
  • 500ml chicken or veg broth
  • 1 tsp crushed ginger
  • 1 tsp chilli flakes
  • 1 tsp miso paste
  • 1 tsp coconut oil
  • 2 Rolls Soba Noodles
  • Asian greens of choice

Recipe:

1: Heat the oil in a pot on medium heat and add finely sliced garlic.

2: When fragrant add the ginger and chilli flakes, cook for 1 minute

3: Chop the mushrooms into slices and then add to the pot. Cook for 2 minutes

4: Add the stock and bring to a simmer

5: Slice the chicken into slices and poach in the stock for 10 minutes

6: Add the miso paste and mix

7: Add soba noodles, cook until done.

8: Serve alongside some asian greens.
