Lentil Dahl*

Ingredients:

  • 1/3 tbsp olive oil
  • 1/3 small onion, chopped
  • 2/3 tsp cumin, ground
  • 1/3 clove garlic, crushed
  • 1/3 tbsp fresh ginger, grated
  • 1/6 cup red lentils, rinsed
  • 133 tinned diced tomato
  • 1/2 cups vegetable stock
  • 2/3 tsp lemon juice
  • 2 cups rice, cooked

Recipe: (save 1/2 for tomorrow)

Cook rice according to packet. Heat the oil in a large saucepan or nonstick pan. Cook the onion for 2-3 minutes until soft, add the cumin, garlic, ginger and lentils and cook for 1 minute. Add tomatoes and stock, bring to boil then reduce the heat to low and simmer for approximately 20 minutes until soft. Add the lemon juice and process in a food processor if desired. Top Dahl on top of rice. Save half for lunch tomorrow and serve the rest with finely chopped fresh coriander.
