Leftovers: Tofu skewers with salad and quinoa

Ingredients:

  • Leftover tofu skewers and quinoa from previous night
  • 1/2 Lebanese cucumber, peeled and cut into 4 cm pieces
  • 4 cherry tomatoes, halved
  • 1/2 cup baby cos lettuce
  • 20g feta cheese
  • Lemon juice
  • Salt and pepper

Recipe:

Reheat skewers and quinoa. Place cos and cucumber on plate. Drizzle with lemon juice, salt, pepper and feta. Top with 2 skewers and quinoa. Enjoy!
