Leftovers: Tofu skewers with salad and quinoa
Ingredients:
- Leftover tofu skewers and quinoa from previous night
- 1/2 Lebanese cucumber, peeled and cut into 4 cm pieces
- 4 cherry tomatoes, halved
- 1/2 cup baby cos lettuce
- 20g feta cheese
- Lemon juice
- Salt and pepper
Recipe:
Reheat skewers and quinoa. Place cos and cucumber on plate. Drizzle with lemon juice, salt, pepper and feta. Top with 2 skewers and quinoa. Enjoy!
