Leftovers: BBQ chicken in large salad with potato salad
Ingredients:
- Leftover chicken and potato salad
- 1.5 cup salad greens (lettuce, cucumber, tomato, etc)
- 1/2 avocado
- Lemon juice and cracked pepper (optional)
Recipe:
Reheat chicken from previous evening. Serve over salad greens with avocado (with optional drizzle of lemon juice and pepper for added flavor) and leftover potato salad.
