Large salad with small tin salmon and brown rice
Ingredients:
- 1 cup Leftover Rice
- Approx. 2 cups mixed greens (eg. Spinach, arugula, butter, etc.)
- 1/4 avocado, diced
- 6 cheery tomatoes, halved
- Small tin salmon
- 1 tbsp lemon juice (optional)
Recipe:
Mix greens in large bowl. Reheat rice and add to salad. Top with tinned salmon, avocado and tomato (top with lemon juice if desired).
