Lamb Kofta with Pomegranate Couscous (serves 2. Use for dinner and tomorrow lunch)

Ingredients:

  • Lamb mince (500g)
  • 2.5 tbs Pistachio dukkah
  • 100g dried couscous
  • 1 x Lebanese cucumber
  • 100gram cherry tomatoes
  • 50g pomegranate seeds
  • 1 Lemon
  • Mint, Coriander
  • 1 tsp Chilli flakes
  • 50g yogurt

Method:

1: Make the kofta by combining the mince, dukkah, chilli flakes and some coriander in a bowl

2: Shape the kofta into 8 oval pieces

3: Defrost pomegranate seeds in a bowl of boiling water

4: Prepare your couscous as per instructions on pack

5: Cut up cucumber and cherry tomatoes into similar sized pieces

6: Make a sauce by combining the yogurt, juice of half a lemon, the mint and coriander

7: Grill the kofta on a bbq, on the stove or under a grill until cooked

8: Serve kofta with couscous and some sauce
