Healthy Salad Sandwich

Ingredients:

  • Two slices wholegrain bread
  • Spinach leaves
  • 1 slice of cheese
  • 2 slices red capsicum
  • 3 slices cucumber
  • Thin slice of red onion
  • Shredded carrot
  • Few slices of tomato
  • A little whole egg mayonnaise (optional)
  • Salt and pepper
  • Additional Options include other leafy greens, alfalfa, beetroot, avocado or for meat eaters ham or chicken for meat eaters.

Recipe:

Put all the ingredients between a couple pieces of good bread like wholegrain or sourdough and there you go. Yumalicious.
