Green Salad with Falafel and Tzatziki*
Ingredients:

- Mixed salad greens / veggies (eg lettuce, cucumber, capsicum, tomato, etc.)
- 150g Falafel balls (for each, these can be storebought, such as Yumi’s brand… approx 6 balls)
- 2 tbsp Tzatziki sauce:
- 1/8 English cucumber, peeled and finely diced, excess water removed
- 1/2 cups cold plain Greek yogurt
- 1 cloves garlic, pressed
- 4 tsp chopped dill, fresh or frozen
- 1 tsp freshly squeezed lemon juice
- Salt and pepper to taste
Recipe:
Make Tzatziki sauce by combining cucumber with yoghurt, lemon juice, garlic, dill, salt and pepper. Mix all together and refrigerate for at least 1 hour. Meanwhile, chop vegetables of choice and place into large salad bowl. Heat falafel balls according to packet. When ready to serve, top salad greens with falafel and drizzle with Tzatziki sauce. Save half Tzatziki for lunch tomorrow!
