Fish with Asian Style Greens and Brown Rice
Ingredients:
- 1 white fish , approx. 150g
- 1/2 spring onion
- 1/2 tbsp lime juice
- Rind from 1/4 lime, finely grated
- 1/2 tsp brown sugar
- 1/4 tbsp olive oil
- 1/2cm knob ginger, peeled and grated d
- 1/2 tbsp sesame seeds
- 1/4 clove garlic
- 1/4 chili, finely chopped (optional)
- 1/2 tbsp oyster sauce
- Small bunch of gai larn (Chinese broccoli) or other similar Asian green vegetable
- 1 cup cooked brown rice
Recipe:
Cook rice according to package. Place fillet of fish on a large piece of foil and top with spring onions, a squeeze of lemon juice and a sprinkle of lemon rind. Fold up the foil parcels and cook for ~20 minutes in a moderate oven or until cooked through. While the fish is cooking, toast the sesame seeds in the pan then set aside. Heat the oil in a pan, add ginger, garlic and chili and cook for 1 minute. Add the oyster sauce and gai larn and cook until the gai larn is wilted. Serve Asian-style greens on bed of rice,
topped with fish and sprinkled with toasted sesame seeds.
