Chicken Thighs and Four Veg (Serves 2) *chicken can be replaced with any protein

Ingredients:

  • 500grm Chicken Thighs
  • 1 x Corn on Cob
  • 1 x Carrot
  • 8-10 florets of Broccoli
  • 8-10 florets Cauliflower

Recipe:

This very simple and quick meal is full of goodness. Drizzle the thigh filets in olive oil and season with salt and pepper. Boil the corn cob for 5 minutes. Add the other veggies to the boiling water with corn. Start to pan fry the thigh filets until cooked through. Should take 6-8 minutes at which time veggies will be ready.
