Chicken and vegetable stir-fry with noodles*
Ingredients:
- 1 tbsp oil
- 1 clove garlic, crushed
- 1/2 onion, sliced
- 475g skinless chicken breast fillet, sliced
- 1/2 red capsicum, sliced
- 1 sm head broccoli, cut into florets
- 1 sm bunch bok choy, leaves separated
- 2/3 cup mushrooms, sliced
- 2 tbsp chopped fresh coriander
- 1 red chilli, sliced (optional)
- 1/4 cup soy sauce
- 1/4 cup chicken stock
- 2 tbsp oyster sauce
- 1 cup cooked rice noodles.
Recipe: (save half for tomorrow)
Cook noodles according to package. Heat oil in a wok, add garlic and onion and cook until onion is translucent. Add the chicken and stir fry for a few min. or until browned. Add the capsicum, broccoli and bok choy. Cook for 2-3 minutes. Add the mushrooms and combined sauces and cook for another few minutes. Stir in coriander and chilli. Save half and serve other half immediately with rice noodles..
