Chicken and salad sandwich with mixed nuts

Ingredients:

  • 150g chicken
  • 1/2 tbsp olive oil
  • Salad greens
  • Tomato, sliced
  • 1/4 avocado
  • 2 slices of wholegrain bread, toasted
  • Handful of mixed nuts

Recipe:

Heat 1/2 tbsp oil in nonstick skillet over med-high heat and add chicken – cook 4-5 minutes on each side or until chicken is done. Toast bread. Add chicken, salad, avocado and tomato between bread slices. Serve with handful of mixed nuts; enjoy!
