Black Bean Veggie Burger over Salad Greens*

Ingredients:

  • 0.4 cup cooked brown rice
  • 0.4 cup raw walnuts
  • 1 tsp oil
  • 0.2 medium white onion, finely diced
  • 0.4 Tbsp each: chili powder, cumin
  • powder, and smoked paprika
  • Pinch salt and pepper
  • 2/3 cups cooked black beans
  • 2 tbsp panko bread crumbs
  • 1.5 Tbsp BBQ sauce
  • Salad greens: lettuce, tomato, etc.

Recipe: (save 1 burger for tomorrow)

Cook rice according to packet instructions. Heat skillet over med heat, once hot, add raw walnuts and toast, stirring frequently, until fragrant and golden brown. Let cool. Meanwhile, heat the same skillet over medium heat. Once hot, add oil and onion. Season with salt and pepper, sauté for 3-4 minutes. Remove from heat and set aside. Once walnuts are cooled, add to blender or processor with chili powder, cumin, smoked paprika, salt + pepper, blend until very fine. Set aside. Add black beans to large bowl and mash with a fork. Add cooked rice, spice-walnut mixture, sautéed onion, panko bread crumbs, BBQ sauce, and mix thoroughly with a wooden spoon until a moldable dough forms. Divide into 2 patties and flatten. Heat the same skillet you used earlier to medium heat; once skillet is hot, add just enough oil to lightly coat the bottom of your skillet, then add your burgers (may need to cook 1 at a time). Cook for 3-4 minutes or until well browned on the underside, then flip gently. Cook for 3-4 minutes on other side. Save 1 burger for tomorrow and sere other over salad greens; drizzle with salsa or lime juice if desired.
