Bean and Spinach Burgers (makes 8 Burgers) Approx’ 90 cal per burger. Serve up 2 with a green salad
Ingredients:
- 1 tbsp light olive oil
- 1 small red onion finely diced
- 1 Garlic Clove crushed
- 1 small Red Chilli chopped
- 1/2 Tbsp Coriander
- 1/2 Tsp Cumin
- 1 can Sweet Corn drained.
- 1 can Borlotti beans drained
- salt and freshly ground black pepper
- 100 grams chopped Spinach
- 3/4 fresh wholegrain breadcrumbs
Recipe:
Preheat oven to 375f. Heat the oil in a nonstick fry pan. Add the garlic, onion, chilli and cook over a medium heat for 3 minutes until soft not brown. Place the beans, sweet corn, spinach, breadcrumbs, cumin and coriander in a large mixing bowl. Add the onion mixture and mash together until well combined. Shape the mixture into 8 burgers. Place on an oiled baking tray then brush burgers with olive oil. Bake in the oven for 25-30 min until they are lightly brown and crisp on the outside. Serve in wholegrain pitas or rolls with leafy salad.
