Balsamic Chicken with tomatoes and asparagus*
Ingredients:
- 300g chicken breast
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1/4 bunch asparagus
- 1/4 punnet cherry tomatoes
- 50g mushrooms, sliced
- 50g spinach leaves
- 1/2 tbsp shaved parmesan
Recipe: (save half for tomorrow)
Preheat oven to 200C. Marinate the chicken with balsamic and 1/2 tbsp olive oil. Cover and marinate in the fridge for at least 20 minutes., turning after 10 minutes to ensure both sides are coated. Meanwhile place asparagus, cherry tomatoes and mushrooms in a baking tray and drizzle with 1/2 tbsp olive; season with salted toss to coat. Bake approximately 15 minutes or until tomatoes start to brown and skins split. Heat tsp olive oil in frying pan on medium. Cook chicken for 6-8 minutes each side until cooked through. Remove from pan and slice.
