Baked fish with Bacon and Brussels sprout Stir-fry
Ingredients:
- 1 firm fish filets
- 1/4 spring onion, finely sliced
- 1/2 tsp lemon rind, grated
- 125g Brussels sprouts
- 1/4 tbsp olive oil
- 1/4 clove garlic, finely chopped
- 20g bacon, finely chopped
- 1/2 tbsp lemon juice
- 1/4 cup quinoa, cooked
Recipe:
Cook quinoa according to package. Trim the ends off Brussels sprouts. Peel off and discard any blemished outer leaves. Cut each sprout in half and set aside. Place filet on a piece of foil, top with combined spring onions and lemon rind. Wrap and
place in a moderate oven. The fish should be cooked in approximately 15 minutes. While the fish is cooking, heat the olive oil in a large skillet over medium heat. Add garlic and bacon and cook, stirring, until the garlic is fragrant, about 60 seconds. Add Brussels sprouts and cook until crisptender, about 5 min. Remove from heat and stir in lemon juice. Season to taste with salt and pepper.
Serve fish with sprout and bacon mix and 1/4c
cooked quinoa.
