2 small lentil burgers over Green salad*
Ingredients:
- 1 small sweet potato
- 1/4 cup of quinoa, uncooked
- 200g of tinned lentils, strained and dried
- Handful of chopped parsley
- 1/2 teaspoon of chilli flakes
- 1/4 onion, finely diced
- 1/4 teaspoon of dried cumin, oregano and crushed coriander seeds
- A few drops of tabasco sauce
- 1/2 clove of garlic, finely chopped
- 1/2 egg, gently beaten
- Mixed salad greens- eg arugula, tomato, etc
Recipe:
Dice the sweet potato and boil until soft and then mash. Cook quinoa with water according to packet instructions until water is absorbed and quinoa is fluffy. Add all ingredients together aside from mixed salad greens and mix with your hands (or a fork). Set aside in the fridge for 30 minutes. Remove burger mix and shape into 1 large burgers and 2 small burgers and lightly pan fry until golden brown. Save 1 large burger for tomorrow and enjoy 2 small burgers over a bed of mixed salad greens tonight.
