2 Cups Vegetable soup with toast*

Ingredients:

  • 3 tomatoes
  • 3 green capsicums
  • 1kg carrots
  • 2 cups green beans
  • 1 bunch spring onions
  • 1 bunch celery
  • 2 large cans crushed tomatoes
  • 4 cups water
  • 2 vegetable stock cubes (or to taste)
  • Salt/pepper to taste
  • 1 piece sourdough toast

Recipe:

Chop vegetables and place into a large pot with the crushed tomatoes and water. Add the vegetable stock cubes and simmer until vegies are tender, about 1 hour. Add salt/pepper to taste. You can substitute other vegetables also, such as broccoli, cauliflower, mushrooms, zucchini and a bit of chili. Serve with sourdough toast. Freezes really well also!
